Pancakes are the best way to start a new day. In summer the pancake stacks are topped with strawberries and other fresh seasonal ingredients.

- 1 cup oat yogurt
- 1 cup oat milk
- 1 cup oats
- 1,5 tsp baking powder
- coconut oil for baking
- Measure all the ingredients in a blender and blend until smooth and creamy. Let the batter to set in room temperature for about half an hour before baking the pancakes.
- Heat a pancake pan on low-medium temperature. Oil the pan before pouring the batter into it. Bake for 2-3 minutes on each side.
If you don’t have a blender (or even if you do) just replace the oats with oat flour.
