Sugar Free Chocolate Biscuits
I’m trapped in my home because of the cold weather. It’s so freezing outdoors that we can’t go out to play with my kids who are still on holiday from their kindergarden. Especially the youngest one would be deep frozen in no time. So we play indoors. Or they play, I’m really not the playing type of mom who keeps the kids entertained at all times. But I do bake and baking with kids is a great entertainment for the whole family! And when it’s -25 ºC right behind your doors and windows, heating the oven is one of the best ideas.
Sugar free chocolate biscuits are really easy to make with kids and the whole family can enjoy these even the whole tray at once without guilt.
These sugar free chocolate biscuits are also vegan and gluten free. Make them really thin to get them crispy and crunchy. If you prefer more the cookie type that is soft inside, then just make your biscuits bigger and thicker to turn them into cookies.
The easiest way of doing these biscuits is to use a food processor but you’ll do just fine without. If you don’t have one, just chop the nuts with a knife and mash the bananas with a fork. When baking with kids I think it’s even better idea to let them to do the mashing. Even the youngest children get those important feelings of succeeding doing it. You can always but the ingredients into a processor if those little hands leave the fruit too chunky.
My kids love to participate as much as I let them. They are already pros at measuring ingredients, mixing and pouring things. The oldest, who just turned four, learned today to crack eggs without a mess or shell pieces in a dough. Seeing their joy always makes me so happy. I also make a big deal of these new things they learn. I give them a big applause and encourage them to tell everyone what they have learned. Obviously I’m super excited when they learn new kitchen skills. Chocolate biscuits are vegan but we made omelette for lunch and that’s what we needed the eggs for, many of them so she got a good practice.
I used pecans to make these perfectly crunchy biscuits but you can use any nuts you like or have. If you don’t have raw cacao powder, use the regular one but put a little bit more of it. And when it’s finished, by the raw version, ok? It’s so much tastier and better for you than the highly processed regular cacao.
Vanilla powder can be substituted with vanilla extract.
I used cookie cutters to form round biscuits, afterwords thinking it would have been more fun to do for example golden retrievers instead of the most boring form. You don’t roll the dough but spoon it in a cutter placed on a parchment paper and tap the batter even with the same spoon.
Sugar Free Chocolate Biscuits Recipe
makes 25-30
1 dl nuts
2 ripe bananas
2 tbsp raw cacao powder
1 tsp cinnamon
1 tsp cardamom
0,25 tsp vanilla powder
3 dl gluten free oats
2 tbsp cacao nibs
- Preheat oven to 175 degrees, celcius.
- Put the nuts in a food processor and run to a coarse meal.
- Add peeled bananas, raw cacao powder, cinnamon, cardamom and vanilla powder. Run the processor until all the ingredient are well blend.
- Pour the mixture in a bowl and add oats and cacao nibs. Mix well.
- Form small and thin biscuits on a baking tray lined with parchment paper.
- Bake for about 20-30 minutes or until the biscuits are crunchy.
