Lingonberry coconut overnight oats make a perfect wintery breakfast for busy mornings.

Wintery overnight oats are mixed with lingonberries, shredded coconut and cloves. Overnight oats come in very handy on busy mornings. You know those mornings when you are so busy you have to load your coffee maker in the evening? Maybe the alarm goes off so early you can’t even think about making yourself a breakfast but rather spend that time in bed. Well right after having loaded the coffee, mix your oats!

Overnight oats with lingonberries and shredded coconut.

Lingonberries can be substitute with cranberries. Lingonberries are a nordic delicacy, superfood that anyone can go to pick in the forests, they grow every where here. I pick mine in the nearest supermarket every time a finish a bag. 😀 Frozen berries are great in the wintertime when everything fresh is brought from the other side of the world. The berries can be put in the oat bowl frozen, I often smash mine a little with a fork to get the juices out when they defrost during the night. Lingonberries, just as cranberries, are pretty acid, so if you feel it’s too much, add a teaspoon or two of maple syrup or honey.

Lingonberry Coconut Overnight Oats Recipe

2,5 dl natural (greek) yogurt
1 dl oat meal
0,5 dl frozen lingonberries
2 tbsp shredded coconut
pinch of ground gloves

  1. Mix all ingredients together in a bowl. Cover and place in the fridge for over night.
