Lovely peppermint stracciatella nice cream cools without refined sugar on a hot summer day. Only 4 ingredients!
Today (which is May 11th by the way) it’s still snowing here in Finland. Sooooo annoying. And depressing. It’s supposed to be summer in a couple of weeks and we don’t even have spring yet! Where can I leave my complaint??
Nice cream is always good, despite the weather. It’s easy and quick to make, has no additives or refined sugar and is definitely healthy.
Frozen bananas are the core ingredient. I always keep a bag or two in the freezer. Here’s a practical hint: Spread the banana slices in a freezer bag and freeze flat. Pros: takes less space in the freezer and is very easy to blend.
The most simple nice cream is only blended frozen bananas. It gets more exciting if you add some other frozen food or berries in the blender. My favorites are blueberries and lingonberries!
You don’t need to have a high-speed super blender, have faith, it will blend. You just might need to scrape the edges of your blender for a couple (or twenty) times during the process.
If you want your peppermint nice cream to have the characteristic green color, use matcha or spirulina. Please note that they both are pretty they both have pretty intense flavor, so start with just a pinch.
- 1 cup frozen banana
- ⅓ cup almond milk
- a few drops of edible peppermint oil
- 4 tbsp cacao nibs
- Measure bananas, almond milk and peppermint oil in a blender. Pulse until the nice cream is silky and creamy
- Add the cacao nibs and pulse for a few more moments.
- Serve immediately.
