Cream cheese pumpkin pie ice cream requires only 4 ingredients, a fork and an hour of your time. Actually it takes just two minutes of your time and an our of your freezers time.
I tried to limit my pumpkin mania to October but as butternut squashes just keep looking gorgeous in my grocery store I can’t help my self and I absolutely have to bring one home a couple of times a week. Butternut squash is still in season and fairly cheap and pumpkin pie spices go so well with other christmassy flavors.
Cardamom doesn’t traditionally go into a pumpkin pie spice mix but I’m sooo in love with it right now and use it practically for everything. I even make my coffee with it and I just can’t name a thing that wouldn’t go well with cardamom. My family instead is able to name a bunch of things that they rather eat with out it, those weirdoes…
How to make cream cheese ice cream?
If you have an ice cream maker, great! If not, you just need a little more time and four visits to your freezer to mix the ice cream mixture while it’s chilling. This ice cream is so easy to make that it makes you wonder why you don’t make it every day. I don’t have an ice cream maker so the instructions are for man powered fork mixing.
For cream cheese pumpkin pie ice cream you just whisk the ingredients well with a fork in a freezer proof bowl. Once you have a smooth mixture, you pop the bowl in your freezer and turn to it every 15 minutes to give it a good whisk. You could of course use a whisk, a hand mixer or even that ice cream maker but fork works just as well as more elaborated tools.
After an hour of chilling the ice cream is done and ready for being indulged.
I use meat ball scoop to carve ice cream. I find it very handy for a lot’s of things other than meat balls, like doing cookies or filling muffin pans with dough.
Christmas ice cream
Ice cream might not be something you have cravings for right before Christmas or during the cold seasons in general. But winter is a great opportunity to enjoy some rich and creamy ice creams with seasonal flavors as during the summer you are more likely to go after cooler and refreshing tastes and textures, at least I am. Try wintery cream cheese ice cream with other seasonal berries and fruits like cranberries or prunes.

Cream cheese pumpkin pie ice cream recipe
100 g cream cheese
1 dl (1/3 cup+2 tbsp) pumpkin pure
2 tbsp mapel syrup
1 tsp cinnamon
1/2 tsp cardamom
1/4 ground ginger
1/8 ground nutmeg
1. Mix all the ingredients in a freezer proof bowl to a smooth mixture.
2. Freeze for one hour, mix vigorously with a fork every 15 minutes.
