Aromatic purple sweet potato is perfect in overnight oats. Who wouldn’t want to start they day with a bowl full of color?

Overnight oats are one of my favorite breakfast and not least because of their easiness and fastness. They are prepared in minutes the night before and in the morning you just need to stick your spoon into the pudding and start to eat. I often take the oats to go and eat them when I get to my office.

I do recommend though to take your time in the mornings. Wake up early enough, make sure to have time to stretch and yawn, to have a shower and to enjoy a steaming cup of freshly brewed coffee or green tea.

I’m a morning person, I love quiet and slow mornings and I always try my best to arrange my morning to be dreamy. I little hygge moment to start my day in positive mood and with bright brain.

There is a specific reason I take my breakfast to the office with me: we have an incredibly good coffee maker that makes coffee to die for. 😀

I topped the purple sweet potato overnight oats with bananas, finely chopped fresh pine apple, crushed pistacchios and shredded coconut.

Yellow is so pretty with purple.

Ingredients

  • ½ cup gluten-free oats
  • 1 cup almond milk
  • ¼ cup purple sweet potato puree unseasoned and sugar-free
  • ½ teaspoon Ceylon cinnamon
  • ¼ teaspoon cardamom
  • 1 tbsp maple syrup

Instructions

  • Measure all the ingredients in a bowl.
  • Place the bowl in the fridge for at least an hour, preferably for overnight.
