Oat meal porridge is a healthy and nutritious choice to start a new day. Top the coconut vanilla oats with fresh summer berries and cacao nibs.
Coconut milk adds extra flavour and richness to the oatmeal porridge and makes it a little sweet. Coconut and vanilla are a heavenly mach so the porridge tastes more like a luxurious dessert instead of a regular breakfast.
Oats are packed with protein, they help to keep the blood sugar levels stable and are full of healthy fiber being always whole meal. Try to look for regular non steamed oats that still have all the vitamins and minerals in them. Steamed oats equals to quick cooking oats, steaming is the way to make them to cook faster. It will take anyway just about 10 minutes to have perfect oatmeal porridge so there isn’t really a significant time saving and therefore not a really good reason to use the steamed oats.

- 2 dl oatmeal
- 1 can (400 ml) coconut milk
- 1 dl water
- ⅛ tsp vanilla powder
- Measure all the ingredients in a thick bottomed pot.
- Put the pot on a stove on high heat and bring the porridge to boil constantly stirring. Oatmeal - or coconut milk to be exact - sticks to the pot bottom really quick once it's close to boiling.
- As soon as the porridge starts to boil turn off the stove and cover to pot with a lid. Leave to sit occationally stirring for about 10 minutes.
